I am so excited about these cookies. Since Leah is still in California, I had to text her after I made them to tell her just how wonderful they are. If you like coconut and/or pecans, you must make these. I demand it. And you know what else? Cookies freeze perfectly fine so you can make a thousand of them, freeze them, and eat them every day for the rest of your life (assuming you have a microwave to thaw them out to a nice faux fresh-baked warm and gooey state).
They aren't too sweet, which helps the other delicious flavors shine through. I like cookies where you can actually taste the awesome flavors, rather than just being covered up by sweetness. I used raw sugar also, which gives nice texture, but feel free to use whatever you have on hand.
Mix:
1 stick butter
1/2 cup coconut oil
1 cup sugar
2 eggs
1 teaspoon vanilla extract
Combine & Add:
2 cups flour
3 cups oatmeal
1 teaspoon baking soda
1 teaspoon salt
Add:
1 cup flaked coconut
1 cup pecans, in pieces
Bake on a greased cookie sheet at 340° for 18 minutes.
