2 T flour
2 T PB2 (original or chocolate)
1/4 cup brown sugar
2 T unsweetened cocoa powder
pinch of salt
2 T coconut oil
2 T coffee
First mix up all the dry ingredients, then add in the wet, until all combined. Pop it into the microwave for 1 minute and 30 seconds, checking it every 30 seconds until it is almost completely set, but still a little gooey.
For the sauce:
1 square baking chocolate
2 tsp coconut oil
sprinkle espresso powder
4 tsp cocoa powder
2 tsp brown sugar
Now, the sauce seriously makes it. It isn't super sweet, but it balances out the brownie. If you want it sweeter, just add some more brown sugar. Melt all of this in the microwave until smooth, checking every 30 seconds. we kept adding cocoa powder until we liked the consistency, so feel free to adjust that to your own preferences.
This makes one enormous brownie, which turns out to be just the right amount to split between two people.
